If there is any advantage to the slow winter sales season, it is that many of our cheeses have an extra couple months of aging, giving them an even fuller flavor. All of us of staff are loving Vivace Bambino right now; its blend of Swiss and Italian styles yields an addictively snackable mix that is perfect on a cheese board, for melting on a burger or quesadilla, or just for a quick nibble. These wheels are four months old right now, making them more typical of Vivace but with a slightly firmer texture from the smaller wheel size. 
Dutch Farmstead is likewise tasting amazing. Also aged around 4 months, these current wheels maintain their milky flavor and rich texture but with the added complexity and depth that comes from the raw milk and additional aging time.
