Molto is back! Our aged Vivace, one year old, is medium sharp and fruity with a well-balanced finish and tremendous depth. Molto Vivace is a fabulously complex aged cheese to enjoy with wine, spicy jams or chutneys, thin sliced salami, or a fruit and nut bread. This year’s batch is not as dry as sometimes. We recommend Molto Vivace on a cheese board alongside a wheel of Celeste and a slice of Bloomsday or Black Ledge Blue!
Molto Vivace is a seasonal special available only from Thanksgiving to Christmas.
