For the final round of our March Madness cheese-off, we are down to our two best-selling cheeses: Aged Bloomsday vs. Womanchego. Aged Bloomsday is a classic aged cheese, medium sharp with cheddary acidity balanced by sweet notes like almond butter. Womanchego is milder but addictively easy to eat with a smooth, supple texture and delicate notes of lambswool, buttermilk and vegetable broth. Womanchego is our choice melting cheese for tortillas, while Aged Bloomsday goes well on a burger with sauteed onions. Enjoy both with grapes, sliced apples, or jam. Serving them with wine or beer? Try oaked chardonnay, cabernet sauvignon, or IPA with Aged Bloomsday, and pair Womanchego with pinot noir or an amber ale.
