Our first bloomy rind cheese! Gossamer is inspired by the classic Camembert style bloomy rind and made with pasteurized milk. We find the flavors to be delicate and reminiscent of clean milk with a soft and supple cheesecake like center. Gossamer is a wonderful entry way cheese to any foodie as we find the flavors to very approachable yet well executed. Enjoy Gossamer with sparkling wine, dried apricots and good company.

We sell our Gossamer in two ripeness formats - ripe, and very ripe! As a bloomy rind, the cheese will continue to get softer and gooier over time. We like to offer the two options in case you plan on holding onto these wheels for a later time. For reference, the first picture is “Ripe”, and the second picture is “Very Ripe” - we suggest eating the “Very Ripe” within a few days of receiving.

Gossamer can only be purchased as a whole wheel (.66 lb) to ensure freshness and quality due to the young and ripe nature of this cheese.
