Eclipse is the ash-ripened version of our Celeste, giving it a striking aesthetic on a cheese plate.
This is a lactic set cows’ milk cheese reminiscent of Loire Valley goat cheeses. In this style, the milk acidifies overnight until it forms a delicate curd; we ladle the curd into forms and let it drain for two days before moving the small wheels to our aging room. Then the wheels get rolled in edible vegetable ash - which buffers acidity and helps to promote yeast and mold growth.
Eclipse is slightly tangy with a velvety texture at two weeks old; the paste continues to break down and the cheese gets stronger and riper as it approaches one month in age. Spread across seed crackers or a crusty bread with a drizzle of honey or a dab of jam. Enjoy!
The Eclipse wheels are small (around .35-.4 pounds each), so we are selling them in quantities of 2 at a time - we are confident that you’ll have no trouble polishing those off in two sittings!
